Here are the qualities that must be look for in bakery products:
- Color of the product
The first characteristic is the color of the product when it is finally removed from the oven. This is important to the visual appeal of the product. Color stimulates the senses and encourages the customer to purchase.
Appearance is about form and shape. It is important that all pieces have the same appearance. One item should not be smaller than the other and vice versa.
Consistency and texture are about how it feels in the mouth when the customer is consuming the product. A product must not only be delightful but consistent in taste. This is why standard recipes need to be followed when making bakery products.
- Moisture content
Moisture content adds to the shelf life and mouth feel of the product. You need to be careful since a slight deviation from a standard recipe can completely affect the physical properties of a food product. For instance, substances that are too dry may affect the consistency of the end product.
- Mouth feel
What customers feel in their mouth is crucial to whether they like the food or not. Mouth feel is as important as taste and smell, especially when it comes to bread.
All of the characteristics above can be achieved by maintaining consistency in production. Nobody is allowed to move away from the given formula and standardized design.
